Back on schedule and fun run!

Good Morning! 😉  Today in the ATL it is soooo dreary. Last night we had thunderstorms and lightening all night long.  I think I got a total of 4 hours of sleep!  All of my kids went back to school today (February break = OVER, LOL).  So if I get tired, I can always take a nap. 😉

I want to begin by talking about my run yesterday – which I actually enjoyed now that there is no pressure.  I did a 3 mile run, just under 10 minute miles, and burned about 350 calories.  Sundays are good run days, for sure!  Since it was 70 degrees out, that was an added bonus – no bundling up!

Today I have a plan, there’s some things that I need to knock off of my list (there is always a list).  The following should keep me busy until the kids get home from school (and when my day ultimately begins)

  1. Call eye doctor to make appointment
  2. Make reservations for vacation with the family to the beach
  3. Put gas in the car (nothing like having one square left).
  4. Go to WalMart (ugh, need I say more??)
  5. Study for the ACE Exam
  6. Schedule the ACE Exam (I’m thinking 2 months out from now).
  7. Go to the bank
  8. Figure out what to make for dinner.  (This one is especially hard).
  9. Go to the gym for 6:30pm cardio core class.  (This may be the one thing not done, because I may be really tired…I hate that the class is so late in the day).

Yep, that’s my day to a tee.  Did I mention I may need a nap?

Well, enough about my schedule today!  This morning I had a great breakfast that was very filling:

What you see above is an Ezekial muffin, 1 whole egg, 3 egg whites with herbs de Provence and real, freshly grated parmesan cheese.  Really filling!

Yesterday before my run I had some lunch, and as always, I hate to waste food.  This resulted in a lunch of leftovers:

Wow, that picture is terrible!  What is in it is my homemade butternut squash with craisins and basil, leftover roasted chicken, and the spicy salsa that I’ve been all about lately.

After my run I was hungry again (about 3 hours had gone by) so I had a snack:

Broccoli with Braggs and low sodium cottage cheese.  Dinner always throws me for a loop when Jeremy is home, it’s always so hard to decide what to eat!  Tonight we decided on easy taco’s…and for the record, they were *almost* clean…Ortega mix has maltodextrin in it, but none of the other yucky colors or additives.  I had mine with some more salsa and leftover green beans on the side:

The seasoning was actually kind of bland.  Not sure why!

It was perfect for Sophia, though, who had her taco in the form of a burrito:

and lots of carrots.  Sophia’s fave foods include canned carrots and spaghetti. 🙂

After watching the US win at hockey and then a show on TLC about one of The Biggest Loser contestants who won and then gained it all back I decided I needed another snack:

Homemade french bread with Polaner All Fruit Blueberry Jam.  YUMMY!

not a believer in global warming anymore…

Whatever happened to global warming? Atlanta is supposed to get more snow tomorrow! At this rate, we’ll be shut down for a year, LOL.  In light of all of the snow, I took some pictures.  Now I know that some of you are going to laugh…it is not as much snow as MD, or DC got by a long shot, but still enough to shut us down!

So I have to show some pictures of the snow. 🙂

So sorry I missed a day of blogging 😦 Please bear with me as I get back into “the swing of things” at home!!

Yesterday I thought I was going to run, but I just didn’t have the energy. (Probably because I didn’t run!)  It’s funny how that works out…I have more energy on the days that I exercise.  Yesterday’s breakfast was yummy, and I kind of ate the same thing this morning as well:

Yesterday’s breaky was 1 egg and 2 egg whites with havarti cheese and ezekial bread with blueberry jam.  Today’s breakfast was 1 egg, 2 egg whites with baby bella mushrooms and herbs de provence.  Highly recommended! There was an ezekial muffin with blue berry jam.  I also took a picture of the jam, because it’s clean, with no processed sugars:

Yesterday’s lunch was Wheat Berry Salad…and I have to admit, I ate some chocolate and other things that weren’t clean.  There won’t be anymore of that, rest assured, because it didn’t taste the same that I remembered…and wasn’t very good!

The salad was so good.  I was kind of the person planning the dinners and since my in-laws were still here I decided a couple of days before to marinade some chicken and have Jeremy cook it on The Big Green Egg.  We had regular baked potatoes (I put some cheddar cheese on mine, I had a total craving.)  I also roasted carrots with some EVOO and garlic salt that I ate with leftover brussel sprouts:

Oh my, it was all soooo good.  We also celebrated Aidan’s 10th birthday yesterday, and in light of everything being closed down in the ATL my mother in-law whipped up a cookie cake for his birthday:

I partook in some cookie.  It was sooo sweet though! I kind of felt icky after eating it.  Oh well, I’m all sweetened out now! 😉

Back in the ATL!

Sorry there wasn’t any posts yesterday, but I flew home on an evening flight and got in late.  This morning, I got up, got the kids off to school and went to the gym which made me very happy. 526 calories in about 55 minutes at 21% fat.  In BodyStep class!

Not impressive.  I was disappointed! It was edible, though, and I really needed something to eat after class, because my breakfast was so small.  I was at the gym for a while socializing with my friends, who seemed happy to see me. 😉

When I got home, I just wasn’t that hungry and I was trying to unpack boxes and luggage and whatnot.  Before I went to pick Sophia up from school, I had my fave snack:

I really need to go to the grocery store, it seems as though we’re out of food at our house…which is amazing, since I do have 3 kids!  I decided the clean eating dinner would be grilled pork chops, brussel sprouts, and Rice-a-Roni Nature’s Way rice:

It was sooo good.  I also took a picture of the rice box…tastes like the normal kind, but is preservative free!

I’m not sure what’s going on for the gym tomorrow. We’re supposed to get a ton of snow here! I thought I left the snow in NY! 😉

One more day until 2010!

Oh, boooy! Happy New Years Eve! What are your plans for New Years? My hubby and I stay home every year, we don’t like to go out and fight the crowds and worry about drinking and driving. Plus we’d need a babysitter, which is a problem of it’s own.  We plan on grilling out and having some snacks and watching the ball drop.

Today I am going to the last BodyStep class of the year. I can’t wait! I know the class is going to rock, because of the 2 trainers team-teaching.  It’s going to be a good one 🙂

For breakfast I decided to copy yesterday’s breakfast and had another peanut butter and strawberry non-jelly Ezekial muffin. Scrumptious!!!

Yesterday’s eats were interesting.  I got home from the gym (I started my 1/2 training today!) where I ran my 2 miles…non-stop, @ 10 minutes / mile. (I haven’t run in a year!) I burned 249 calories @ 32% fat in 38:57. This included a 5 minute warm up, cool down, and stretching my hip after. Just in case you were wondering!

Lunch was whatever I could scrounge together quick, so I had some smoked muscles and a salad:

The salad had pom arils and farmer cheese with Goddess Dressing.

Then we headed to the movies with the kids to see the new Alvin and the Chipmunk movie. It was great! The kids really liked it.  I didn’t want to eat the popcorn or anything they were selling there, so I made myself a clean snack to take in with me:

Raw cashews, raisins, and raw cacao nibs.  It looked like this:

Are you wondering what a cacao nib is? Cacao nibs are raw chocolate that are roasted and hulled. They are just a little bit bitter, but when paired with raisins and cashews they are fantastic! They crunch like a coffee bean. When processed with milk and sugar they turn into candy bars.

Dinner was boring, so it was roasted chicken, roasted carrots and salad. We had company, and I forgot to take a picture.  BUT, since I had bought a cake for the kids, (I had 6 kids at my house!!) I made Averie’s raw brownies. OMG, these were the best tasting brownies I have ever ate! And I took a picture:

Last night for dessert I made a concoction but it didn’t turn out exactly the way I wanted (remember, I’m sooo not a good cook)…So I was shooting for another banana boat with a peanut butter/chocolate sauce and what I ended up with was a peanut butter/chocolate liquid that I had to put pieces of banana into.  I mixed 1/4 cup milk with peanut butter, 1 Tb of unsweetened cocoa powder, and 1 Tb honey, then added one banana and sprinkled coconut and raisins on the top:

It looks good in the picture, but needed something..a little less milk, and maybe some agave? If you tweek it and it turns out, let me know!!! 🙂

Wild Wednesday

Hellooo! Yesterday was a good day, my friends! I actually got a good workout in at my gym, an hour BodyAttack class. AND, I got lots of other stuff done too. Christmas is around the corner, kids! Time to get on it!

The almonds were healthy, though, so that’s something. I was starving again an hour later so I made lunch:

Ezekial muffins with homemade hummus, avocado, chicken breast and a “lovely” salad with Goddess dressing. It was absolutely what I needed. I had wanted to eat a whole wheat pita, but under the “Unsuspecting Chemicals” tab (which I am going to set up in a sec.) you will see why!!! 😦
Meal 3 was a Pure Bar. Pure Bars have nothing bad in them, they are raw and vegan (if you’re interested).

At any rate, dinner was one of my “go-to” meals. Clean eating Shepherd’s Pie, green beans, and a small salad with goat cheese, cranberries and almonds! Heavenly! Dessert was Clean eating Molasses Bread Pudding with more cranberries and Cocoa Almonds.

Remember the green beans I grow in my kitchen Aerogarden? I took a pic, and if you look closely enough, you can see some beans growing! Have a Wild Wednesday my friends!!!

So the rest of today was an interesting one food-wise. I snacked on another Pure Bar this morning and it was SO GOOD! I need to get some more!
Lunch was smoked muscles from Maine. They were giving them as samples at my Whole Foods and I fell in loooove. On the side was whole wheat cous-cous with smoked sun-dried tomatoes. Green beans with balsamic vinegar completed my lunch.

I had to run to a parent teacher conference, to the bank, Starbucks (where I had a nonfat grande latte) pick up my other kids and then finally home for a snack. Yummy Ezekial muffin with cashew butter and maca 🙂

I was looking forward to dinner. I ate a little different then the kids…they had steak, I had salmon with a hint of maple syrup, broccoli with Fiesta Lime Mrs. Dash, and Nature’s Way rice, my shortcut side.

Today was my day off for working out. Back to the grind tomorrow! Have a delicious night 🙂
