Crazy Monday

February 1, 2010

Monday’s are crazy busy at my parent’s house.  Doctor appointments, Mom had a treatment today, just craziness, all day long.

I made sure to eat a protein and a carb for breaky this morning:

One whole egg, 2 egg whites, provolone cheese (1/2 slice), blueberry bagel stick, and some blackberry jam.  It was all good, I have to admit that the jam wasn’t clean, it was mostly sugar.  It was only a tablespoon, though.

My 2 cents: One thing I have learned over the last few months is that if I want something that isn’t totally clean, I don’t feel as though I should deny myself.  In the over-all picture, a tablespoon of blackberry jam, or some chocolate, or any indulgence (including wine, which I love but don’t drink a lot of anymore) is not hurting my clean eating efforts or sabotaging my diet.  We are all human, and need to indulge occasionally. I do believe in “moderation”.  Everything in moderation! That’s my 2 cents for Monday. :D

I was so busy at the doctor’s office with my parents that I didn’t even eat my snack, and I had a new bar to try!  I guess we will have to wait for the review tomorrow. ;)

Dad wanted to try Chipotle, a Mexican restaurant.  I knew a little bit about it before I went there, mostly from my husband, who likes to go there when he had a client in Denver, CO.  Mostly we discussed the calories, but I will get to that in a minute!  I really, really want to show you the burrito, and please bear with me through several pictures that I think you all will find entertaining:

size matters :)

This burrito is huge.  The following is another measurement:

WOW! A giant burrito!

This one is mine.  Wait until you see Dad’s, LOL!

INSIDE the HUGE burrito

Of course you need to see a close-up:

Oh, yeah! LOL

Let me tell you the contents of the gigantic burrito.  Please keep in mind that all of these ingredients were fresh.  My burrito had flour tortilla, grilled chicken, black beans, pico de gallo, cheese and guacamole.  Foodgasms!!

Let’s take a look at Dad’s, he ate his for lunch and dinner:

The MONSTER burrito

It had everything else on it! :D

So I caloried out the burrito, and it had approximately 860 calories in it.  I am not ashamed to say I ate the whole thing. There, I came “clean”!  Since I eat 300-400 calories for eat meal, this was almost 3 meals.  I did not have any other meals today.  I did eat some chocolate.  (sorry, no pictures, I am still in burrito heaven, LOL).

I also took the time to make Averie’s chocolate coconut snowballs.  I LOVE these!  You can check them out on her blog.  Let me tell you, if I don’t like the way something tastes, I’m going to tell you.  Averie’s creations are clean and good for you.  Trust me!!

Here are the ingredients:

Simple!

This is what it looks like a glopped into a container:

Is glopped a word? LOL

The finale, all stirred up:

YUMMY!

I put it in the freezer, and tomorrow it will be ready to scoop out.  Can’t wait!!

Yesterday, I posted that I ran 6 miles.  I had forgotten that I took screen shots from the treadmill. :)

OK, just in my defense, I walked the first 5 minutes.  So my time would have been less had I busted out running.  I did the last mile after I reset the treadmill, because you can only do 60 minutes.  My final mile:

Better.

I plan on running tomorrow, but just a few miles outside.

Have a wonderful night with burrito dreams :)

Jessica xoxo

Tasty Tuesday :)

December 29, 2009

I really need to figure out some new things for breaky. Oatmeal and Ezekial Bread with peanut butter are getting old ;) Time to switch things up! Today’s breakfast is a homemade egg muffin. Egg whites, goat cheese, Ezekial muffins. Yep, that’s switching it up, for sure!!! It was really good!

I had some severe stomach issues which I attributed to stress. At any rate, I went to Whole Foods yesterday and stocked up on some necessary items: Mary’s Crack, cashew butter, smoked salmon, smoked muscles, goat cheese, Annie’s Goddess Dressing, arugula (I’m going to make pesto!), carrots, butter lettuce, and 50 other things that equated to $100. ;)

I was finally able to find these “granola bars” at Whole Foods that I was looking for all over…they’re called Cliff Nectar Bars, and were $1.89 each.  They have everything I can eat…the flavor was Lemon, Vanilla, Cashew. It only had 5 ingredients:

1.  Organic Dates

2.  Organic Cashews

3.  Organic Goji Berries

4.  Organic Lemon Juice Concentrate

5.  Organic Vanilla

They were pretty good! They had nothing bad in them, and were only 160 calories. I ate one in the car on the way home…

And the nutrition on the back if you can see it…

I picked up some lunch, too. For lunch I had a Sesame Kale Salad:

In this was kale, carrots, red peppers, sesame seeds, sesame oil, ginger, garlic, sea salt, honey, brown rice vinegar, sherry, tamari and canola oil.  It was just as fresh tasting as it looked, and so good. I craved veggies again today. It is the strangest thing. I swear, that has never happened before. And certainly not 2 days in a row!!! I think I’ve come around some sort of bend with my diet. (Diet being the way I eat, not one that restricts calories. I want to make that clear).

There was also Mary’s Crack and the final end of the Sabra Hummus, and some water! (yes, I take my own advice, LOL!)

Before I hit the gym I made a modified version of one of Tosca Reno’s protein shakes. So it had water, vanilla protein powder, oatmeal, peanut butter, agave, cinnamon. It’s a modified version of Tosca’s because she uses milk and I didn’t want the milk today.

I went to the gym for my Monday night Cardio Core class. We did a ton of shoulder work today, so I expect to be sore in the morning. I burned 335 calories @ 25% fat in 44:07. Oh, and I need to perfect my “burpee”. Those are hard! If you don’t know what a burpee is, click on the link. We do the whole thing with the variation, as many times as we can. I have problems getting up off of the floor, let alone jumping! ;) Try it at home for a good all-over body workout!!

So after the gym I came home and made some dinner. Yes, I am still eating leftovers! So nothing new here, just my sudden veggie addiction:

SO, in case you are just joining me in blogger land, this is broiled carrots and eggplant, a salad with raisins and natural dressing, and shredded mexican taco’s on blue organic corn taco shells with farmer cheese and green chili’s. YUMMY! I was starving, too, after doing fifty million burpees :) .

Dessert was some chocolate coconut snowballs that migrated into little muffin cups because I just can’t seem to get them round:

Hope your Tuesday is as tasty as mine!

Early Bird Gets the Worm!

December 19, 2009

Hello y’all! I wasn’t on early this morning, because being the crazy person I am, I went to class for 8:15am this morning! Wanted to get a good start going to my day ;) Then I did some stretching for my hip (it’s been quite painful recently) and came home. Now I’m doing the 100 loads of laundry that accumulated since Tuesday, and the banking (not fun).

So getting down to it, yesterday’s breakfast was not anything special, except my Peanuts cup was involved and had lots of coffee in it:

Wheatena, peaches, COFFEE!

That’s a lot of peaches, sometimes you just need a LOT ;)

For a snack I ate Ezekial bread with cashew butter, maca and raisins (This is a good snack. LOVES it!) It really fills me up and the Maca goes good with nut butters.

I’m pretty sure I ate other things too…I think I had a Fage yogurt with honey for lunch which I love. I didn’t realize it had so many calories in it (it’s not a bad thing, I was just surprised). It has 250. It’s filling, though, so it’s all good.

I actually ate that in the car waiting to pick up my daughter from pre-k. I was starving again! I also had a Starbucks Latte, but didn’t take a pic of that, since it’s just a cup ;)

Dinner I made tuna with a balsamic reduction with sides of broccoli and sweet potato. Not bad, not great. I’ve said this in the past, I’m not a fantastic cook, but this time it wasn’t me. The tuna tasted “fishy”, so I didn’t like it that much. I got it at Publix, so never again. I guess I’ll stick to Whole Foods, my favorite expensive place to shop :) I did manage a picture of it though. Even the picture looks strange, because of the reduction:

Really, I don’t recommend that meal. VERY plain, and very boring. With the exception of the balsamic reduction, which was very good :)

I then proceeded to eat a handful of raisins, cashew butter out of the jar (not much left there) and made Averie’s  Raw Vegan Chocolate Coconut Snowballs and licked the spoon :) These were the highlight of my day yesterday! SO divine!

Averie's Raw Vegan Chocolate Coconut Snowballs

My workout this morning bright and early was a BodyAttack express class. I burned 364 calories at 24% fat in 43:20. Just in case you were wondering. See you tomorrow morning!
